I was yearning for something sweet last night and looking for something to keep myself busy (since my mind was anxiously talking to itself till 4am). I don't generally keep baking supplies on hand. Baking just isn't my bag baby. I pillaged the cupboards for ingredients and decided that I had nearly all of the components to make oatmeal cookies. This is where it gets jankie. I didn't have any baking soda and despite 20 minutes of googling it appeared that it was kind of important. I decided to give it a go anyways and see what the worst was that could happen.
The result? Success! I went to bed thinking that they weren't too shabby, but in the afternoon my mom and her friend were crunching away in the kitchen telling me they were like crack. I consider that a general measure of success. From my home to yours:

Ingredients:
1/4 cup butter
1 1/2 cups sugar
2 eggs
1 tsp vanilla extract
1 1/2 tsp baking powder
Pinch of salt
1 cup peanut butter
2 cups oats
1/2 cup dried, shredded coconut
1/2 cup baked, sliced almonds
Blend softened butter and sugar in a bowl. Add eggs, vanilla, baking powder and salt. Blend in peanut butter. Add oats, coconut and almonds.
Grease baking sheet and drop large spoonfulls onto it about 2" apart. Use the back of the spoon or a spatula to flattens the mounds. I like big cookies so this yielded about 24.
Bake 15-20 minutes in a 350 degree oven, or until edges have browned.
